Select sortable attributes in Products > Settings > Product Attributes. The attributes table contains the column called Sorting Type. If the sorting type of an attribute is selected, it becomes a sortable attribute.
The Color attribute has a sorting type set to Lowest to Highest (A-Z). The result is as follows:
