You can limit the available order pick-up days in Catalog > Settings > Shipping > Order Pick-up:
Uncheck each day on which the order pick-up should not be available. You can disable the order pick-up for any day of the week:
- Monday
- Tuesday
- Wednesday
- Thursday
- Friday
- Saturday
- Sunday
